Ingredients

- 2 medium beetroots, boiled and diced
- 1 cup spinach leaves, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped

Instructions
- Boil the beetroots until tender, then peel and dice them.
- In a large bowl, combine the diced beetroots and chopped spinach.
- Add the crumbled feta cheese and chopped walnuts.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently.
- Serve immediately or chill in the refrigerator for 30 minutes.
