Ingredients

- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 2 cups cream cheese
- 1 cup granulated sugar
- 1/2 cup sour cream
- 3 large eggs
- 1 cup brewed coffee, cooled
- 1/2 cup cocoa powder
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (163°C).
- Combine chocolate cookie crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- In a mixer, beat cream cheese and sugar until smooth.
- Add sour cream, eggs, coffee, cocoa powder, and vanilla. Mix well.
- Pour the cheesecake batter over the crust.
- Bake for 55-60 minutes until set.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
- Use room temperature ingredients for better mixing.
- Top with whipped cream or chocolate shavings if desired.
- Store leftovers in the refrigerator for up to 5 days.
