Chili’s Southwest Eggrolls are a popular appetizer filled with chicken, black beans, corn, and spices, served with a creamy dipping sauce.

- 1 cup cooked chicken, shredded
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn, frozen or canned
- 1/4 cup red bell pepper, diced
- 1/4 cup green onions, chopped
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 cup shredded cheese
- 8 egg roll wrappers
- Oil for frying
Instructions
- In a bowl, combine chicken, black beans, corn, bell pepper, green onions, cumin, chili powder, and cheese.
- Lay an egg roll wrapper on a flat surface.
- Spoon about 2 tablespoons of the filling onto the wrapper.
- Fold the sides in and roll tightly to seal.
- Repeat with remaining wrappers and filling.
- Heat oil in a deep skillet over medium heat.
- Fry eggrolls until golden brown, about 3-4 minutes per side.
- Remove and drain on paper towels.
Notes
- Serve with avocado ranch or your favorite dipping sauce.
- Can be baked instead of fried for a healthier option.
- Store leftovers in an airtight container in the fridge.
