Ingredients

  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn, frozen or canned
  • 1/4 cup red bell pepper, diced
  • 1/4 cup green onions, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 cup shredded cheese
  • 8 egg roll wrappers
  • Oil for frying

Instructions

  1. In a bowl, combine chicken, black beans, corn, bell pepper, green onions, cumin, chili powder, and cheese.
  2. Lay an egg roll wrapper on a flat surface.
  3. Spoon about 2 tablespoons of the filling onto the wrapper.
  4. Fold the sides in and roll tightly to seal.
  5. Repeat with remaining wrappers and filling.
  6. Heat oil in a deep skillet over medium heat.
  7. Fry eggrolls until golden brown, about 3-4 minutes per side.
  8. Remove and drain on paper towels.
