Ingredients

  • 1 cup shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup cocoa powder

Instructions

  1. In a food processor, combine dates, shredded coconut, almond flour, cocoa powder, almond butter, vanilla extract, and salt.
  2. Process until a sticky dough forms.
  3. Chill the mixture in the refrigerator for 30 minutes.
  4. Once chilled, scoop out the mixture and roll into balls.
  5. In a microwave, melt dark chocolate chips until smooth.
  6. Make a small indentation in each ball and fill with melted chocolate.
  7. Close the ball around the chocolate and roll to seal.
  8. Refrigerate for another 30 minutes to set.
