Description

A delicious twist on classic tiramisu with coconut rum.


Ingredients

  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup coconut milk
  • 1/2 cup coconut rum
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. In a bowl, mix mascarpone cheese, coconut milk, and sugar until smooth.
  2. In another bowl, whip the heavy cream until stiff peaks form.
  3. Fold the whipped cream into the mascarpone mixture.
  4. In a shallow dish, combine coconut rum with a little water.
  5. Dip each ladyfinger into the rum mixture briefly.
  6. Layer half of the dipped ladyfingers at the bottom of a dish.
  7. Spread half of the mascarpone mixture over the ladyfingers.
  8. Repeat layers with remaining ladyfingers and mascarpone mixture.
  9. Cover and refrigerate for at least 4 hours.
  10. Dust with cocoa powder before serving.
