Description
A delicious twist on classic tiramisu with coconut rum.
Ingredients

- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1 cup coconut milk
- 1/2 cup coconut rum
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 24 ladyfinger cookies
- Cocoa powder for dusting
Instructions
- In a bowl, mix mascarpone cheese, coconut milk, and sugar until smooth.
- In another bowl, whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the mascarpone mixture.
- In a shallow dish, combine coconut rum with a little water.
- Dip each ladyfinger into the rum mixture briefly.
- Layer half of the dipped ladyfingers at the bottom of a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat layers with remaining ladyfingers and mascarpone mixture.
- Cover and refrigerate for at least 4 hours.
- Dust with cocoa powder before serving.

- Use fresh ingredients for best flavor.
- Adjust the amount of rum to your taste.
- Can be made a day in advance for better flavor.
