Delicious cranberry sauce coffee cake muffins perfect for breakfast or a snack.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup cranberry sauce
- 2 large eggs
- 1/2 cup milk
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together butter and sugar.
- Beat in eggs one at a time, mixing well after each.
- Add cranberry sauce and milk, stir to combine.
- In another bowl, mix flour, baking powder, salt, and cinnamon.
- Gradually add dry ingredients to wet mixture.
- Fill muffin cups 2/3 full with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let muffins cool before serving.
Notes
- Store in an airtight container.
- Can substitute cranberry sauce with other fruit preserves.
- Great with a sprinkle of powdered sugar on top.
