Ingredients

- 2 pounds of potatoes
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 cup chopped celery
- 1/2 cup chopped red onion
- 1/4 cup chopped pickles
- Salt to taste
- Pepper to taste
- 2 hard-boiled eggs, chopped
Instructions
- Wash and peel the potatoes.
- Cut the potatoes into cubes and boil in salted water until tender.
- Drain the potatoes and let them cool.
- In a large bowl, combine the mayonnaise, mustard, celery, onion, pickles, salt, and pepper.
- Add the cooled potatoes and mix gently.
- Fold in the chopped eggs.
- Refrigerate for at least 1 hour before serving.
Notes
- For extra flavor, add chopped herbs like dill or parsley.
