Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 4 cups beef broth
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in the Dutch oven over medium heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic, sauté until soft.
  5. Add carrots and potatoes, stir well.
  6. Return beef to the pot.
  7. Add beef broth, thyme, rosemary, salt, and pepper.
  8. Bring to a boil, then reduce heat to low.
  9. Cover and simmer for 2-3 hours until beef is tender.

Notes

  • Adjust seasoning to taste.
  • Great with crusty bread.
