A deliciously moist French cake made with ground pistachios.
Ingredients

- 1 cup ground pistachios
- 1 cup granulated sugar
- 4 large eggs
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan.
- In a bowl, beat the butter and sugar until creamy.
- Add the eggs one at a time, mixing well after each.
- Stir in the vanilla extract.
- In another bowl, combine ground pistachios, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before serving.

- Store leftovers in an airtight container.
- Can be served with whipped cream or berries.
