Ingredients

- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup milk
- 1/4 cup molasses
- 1 large egg
- 2 tablespoons melted butter
- 1/4 cup brown sugar for topping
- 1/4 cup cream cheese for icing
- 1 tablespoon milk for icing
Instructions
- In a bowl, combine flour, baking powder, ginger, cinnamon, nutmeg, and salt.
- In another bowl, whisk together milk, molasses, egg, and melted butter.
- Mix wet ingredients into dry ingredients until just combined.
- Heat a skillet over medium heat and grease lightly.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- For icing, mix cream cheese and milk until smooth.
- Drizzle icing over pancakes and sprinkle with brown sugar.
Notes
- Serve warm for best taste.
- Add nuts for extra crunch.
- Store leftovers in the refrigerator.
