- 1 cup coconut milk
- 1 cup heavy cream
- 3/4 cup sugar
- 1/4 cup cornstarch

- 3 large egg yolks

- 1 cup shredded coconut
- Whipped cream for topping
Instructions
- In a saucepan, combine coconut milk, heavy cream, sugar, cornstarch, and salt.
- Whisk over medium heat until the mixture thickens.
- In a separate bowl, whisk egg yolks and vanilla extract.
- Slowly add the hot mixture to the egg yolks, stirring constantly.
- Return the mixture to the saucepan and cook for another 2-3 minutes.
- Stir in shredded coconut.
- Pour the filling into the pre-baked pie crust.
- Chill in the refrigerator for at least 4 hours.
- Top with whipped cream before serving.
Notes
- Use unsweetened shredded coconut for a less sweet pie.
- Allow the pie to chill overnight for best results.
- Garnish with toasted coconut for added texture.
