Homemade version of Samoas cookies, inspired by Girl Scout cookies.
Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup toasted coconut
- 1 cup caramel sauce
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add flour and salt, mixing until combined.
- Stir in vanilla and shape dough into small circles.
- Bake for 10-12 minutes until lightly golden.
- Let cookies cool completely.
- Melt caramel sauce and mix with toasted coconut.
- Top each cookie with the caramel-coconut mix.
- Melt chocolate chips and drizzle over cookies.
- Let chocolate set before serving.
Notes
- Store cookies in an airtight container.
- Use fresh coconut for best flavor.
- Adjust caramel amount to preference.
