Instructions

- Gradually add erythritol, continuing to beat until stiff peaks form.
- Mix in vanilla extract.
- Pipe or spoon meringue onto a baking sheet lined with parchment paper.

- Turn off the oven and let cookies cool inside for 1 hour.
