Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup sour cream
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1 cup heavy cream
  • 1/4 cup sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, melted butter, and sugar in a bowl.
  3. Press the mixture into the bottom of a springform pan.
  4. Bake the crust for 10 minutes, then let it cool.
  5. In a mixing bowl, beat cream cheese and powdered sugar until smooth.
  6. Add sour cream, lime juice, and lime zest. Mix until combined.
  7. In another bowl, whip heavy cream and sugar until stiff peaks form.
  8. Gently fold whipped cream into cream cheese mixture.
  9. Pour the filling over the cooled crust.
  10. Chill in the refrigerator for at least 4 hours before serving.
