Ingredients

- 4 egg whites
- 1/2 cup erythritol or low-sugar sweetener
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 225°F (110°C).
- Beat the egg whites and cream of tartar until soft peaks form.
- Gradually add the sweetener while continuing to beat until stiff peaks form.
- Fold in the vanilla extract gently.
- Pipe or spoon the mixture onto a baking sheet lined with parchment paper.
- Bake for 1 hour or until the meringues are dry and crisp.
- Turn off the oven and let the meringues cool inside for an hour.
Notes
- Store in an airtight container.
- Use room temperature egg whites for better results.
- Adjust sweetener to taste.
