- 1 cup pecans, finely chopped
- 1 cup dates, pitted
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a food processor, combine the pecans and dates. Pulse until finely chopped.
- Add almond flour, maple syrup, vanilla extract, and salt. Pulse until the mixture sticks together.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the balls on a baking sheet lined with parchment paper.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Store in an airtight container in the refrigerator.
- These can be frozen for longer storage.
- Feel free to roll them in shredded coconut or cocoa powder for extra flavor.
