Description
Oreo macarons with vanilla cream filling are delicate French cookies filled with a rich and creamy vanilla filling.
Ingredients

- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1/2 cup crushed Oreo cookies
- 1/2 cup unsalted butter
- 1 cup powdered sugar (for filling)
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 300°F (150°C).
- In a bowl, mix almond flour and powdered sugar.
- In another bowl, beat egg whites until foamy.
- Add granulated sugar and cream of tartar to egg whites; beat until stiff peaks form.
- Gently fold in almond flour mixture and crushed Oreos.
- Pipe small circles onto a baking sheet lined with parchment paper.
- Let them rest for 30 minutes.
- Bake for 15-20 minutes.
- Let cool completely before filling.
- In a bowl, beat butter until creamy; add powdered sugar and vanilla extract to make the filling.
- Pipe filling onto half of the macarons and sandwich with the other half.
Notes
- Room temperature egg whites work best.
- Do not skip the resting time before baking.
- Store in an airtight container for up to a week.
