Delicious red velvet cheesecake bites are a perfect treat for any occasion.
Ingredients

- 1 cup red velvet cake mix
- 2 oz cream cheese, softened
- 1/4 cup sugar
- 1/2 tsp vanilla extract
- 1 egg
- 1/4 cup all-purpose flour
- 1/4 cup butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the red velvet cake mix, melted butter, and egg.
- Add flour and mix until combined.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth.
- Grease a mini muffin tin.
- Place a small amount of the red velvet mixture in each muffin cup.
- Add a dollop of the cream cheese mixture on top.
- Cover with more red velvet batter.
- Bake for 15-18 minutes.
- Let them cool before serving.
Notes
- Store leftovers in an airtight container.
- These bites freeze well.
- Use food coloring for a richer red color if desired.
