Rocky Road Chocolate Fudge Cookies are rich and chewy with a mix of chocolate, nuts, and marshmallows.
Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup mini marshmallows
- 1 cup chopped nuts (walnuts or pecans)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter, granulated sugar, and brown sugar.
- Add eggs and vanilla, mixing well.
- In another bowl, combine flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Fold in chocolate chips, marshmallows, and nuts.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 10-12 minutes.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Store cookies in an airtight container.
- Best enjoyed fresh but can be stored for up to a week.
