Deliciously soft and cinnamon-sugar coated muffins.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup milk
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup sugar for topping
- 1 tablespoon ground cinnamon for topping
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, salt, and cinnamon.
- In another bowl, cream together butter and sugar.
- Add eggs and vanilla to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet mixture, alternating with milk.
- Fill muffin cups with batter.
- Mix the topping sugar and cinnamon, then sprinkle over the muffins.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Let cool before serving.

- Store in an airtight container.
- Can be frozen for up to 3 months.
