Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1/2 cup molasses
  • 1/2 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream butter and brown sugar.
  4. Add eggs one at a time, then mix in molasses.
  5. Alternate adding dry ingredients and buttermilk to the wet mixture.
  6. Fill muffin tins with batter.
  7. Bake for 18-20 minutes.
  8. Let muffins cool before serving.
