Crispy fritters made with spinach and black-eyed peas.
Ingredients

- 2 cups fresh spinach, chopped
- 1 cup black-eyed peas, cooked
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 cup water
- Oil for frying
Instructions
- In a bowl, mix spinach, black-eyed peas, onion, garlic, and spices.
- Add flour and cornmeal; mix well.
- Gradually add water to form a thick batter.
- Heat oil in a pan over medium heat.
- Drop spoonfuls of the batter into the hot oil.
- Fry until golden brown on both sides.
- Remove and drain on paper towels.
Notes
- Serve with your favorite dipping sauce.
- Use fresh spinach for best flavor.
